Automatic headspace injector is a convenient and fast sample preparation method in gas chromatography, the principle is to put the sample to be measured into a closed container, volatile components from the sample matrix by heating and heating, achieve equilibrium in gas-liquid (or gas-solid) two phases, and directly extract the top gas for chromatographic analysis, so as to test the composition and content of volatile components in the sample.

The use of headspace injection technology eliminates the need for tedious sample preparation, interference with analysis by organic solvents, and contamination of columns and inlets. Headspace injection is divided into solution headspace and solid headspace.

It can be used not only in chemical reactions, but also in the analysis of food, take the Maillard reaction, also known as the Mena reaction, first discovered by French chemist Louis Camilla Maillard in 1912. Specifically, it refers to the reducing sugars and proteins in food when heated, producing brownish-black macromolecular substances. In short, it is to make the color of the food black when cooking.

The changes of flavor components of soybean protein isolate protein powder under the conditions of 70°C, 90°C and 140°C were analyzed by automatic headspace injector and gas chromatography-mass spectrometry. It was found that at 140°C, a significant Maillard reaction was detected in the protein powder, and its flavor components had the characteristics of Maillard reaction products, suggesting that headspace/gas chromatography-mass spectrometry could be used to rapidly detect the flavor substances produced by the Maillard reaction in hotly processed foods.

Compared with sensory evaluation, simultaneous distillation extraction and gas chromatography-mass spectrometry and other headspace-gas chromatography-mass spectrometry, headspace solid phase microextraction and gas chromatography-mass spectrometry, the headspace sampler is used as a reactor of Maillard reactor and an extraction device for reacting flavor substances, and the method has the advantages of rapid and small loss of flavor substances, which is suitable for Maillard reaction mechanism and application research.
